The Pacamara variety, first cultivated in El Salvador, has become synonymous with the country. A crossbreed between the Pacas and Maragogype, the coffee yields large cherries (and beans), produces a strong yield per plant, and offers dynamic flavor profile. This lot comes from Los Pirineos, a farm in the eastern Salvadorian province of Usulatán. Owner and fourth-generation coffee farmer, Gilberto Baraona, has dedicated much of his life to experimentation, innovation, and improvements on his farm and mill (including experimental methods of drying and a coveted variety garden). This lot of Pacamara is a fully washed selection from the lower areas of the farm. In the cup, we get sweet notes caramel and cherry, with a citrusy and bright herbal hop-like finish.
