Rodrigo Sanchez is a pioneering innovator in coffee varieties and processing from Pitalito, Huila, Colombia. This lot is a Pink Bourbon variety: one that looks like Bourbon, but has genetic ties to Ethiopia/Kenya/Africa. When harvested, Rodrigo picks the coffee at precisely 28 degrees of Brix (sugar development). The coffee is then pulped and fermented in a cold environment (50-55˚F) for 76 hours, then dried on shaded African beds. This precise professing gives the Pink Bourbon an intense floral aroma, drinking with vibrant fruits and lingering sweetness.
