First cultivated in the mid-1850s by settlers and missionaries, this variety, which yields a sweet and floral cup profile, has been a staple of El Salvador. This lot from Mario Valiente’s Finca Calera - Vista Hermosa is a great expression of Central American coffee. It utilizes a honey process, which means that some of the fruit is left on the outside of the bean as it dries slowly and thoroughly on raised beds. This slow-dry process typically yields a subtle fruity undertone and sweeter body. When brewed, this coffee will drink with deep cocoa and concord grape sweetness, and a subtle grape acidity and floral finish.
