"Entre Volcanes" (which translates to "Between Volcanes") is a regional blend of coffee that our friends at San Miguel Coffees. They source it from, you guessed it, multiple small farm holders from between the Volcanoes of the Antigua Valley. This program initially served as a way to help small farmers find a more direct route to market their coffee. San Miguel set up a washing station and paid farmers for quality picked cherry. Produces are paid immediately, and San Miguel handles the rest of the milling process.
A few years ago, San Miguel invested in a small micromill to focus on developing smaller micro-lots for their farmer community. They work directly with said farmers, collaborating on the growing and ripening process. Then, when brought to the micromill, they can separate super small lots of coffee, which retain a unique character.
In the specific lot we chose, they decided to use a natural process on a 100% Red Bourbon lot. The qualities that pop out are intense. When tasting this coffee, we noticed a rich cocoa and fig undertone, with floral and acidic notes that remind us of ripe pears.
